China has started full-scale production of beer from milk in the city of Xingtai (the province of Hebei). Fresh cow's milk is the stuff from which the new sort of "milk beer" is made. The new product is a result of milk fermentation with use of modern high technologies.
The "milk beer" has several characteristic features: low alcoholic content, rich froth and rational carbon dioxide content. This sort of beer has all vitamin characteristics of sour milk products.
China is the third after the USA and Japan country that started production of "milk beer". The technology of production of beer from milk was developed in the Food Research Institute in the city of Tianjin. A professor of the Institute says that the "milk beer" is of curative effect: it has a positive effect on blood circulation and removes tiredness. The experimental production of beer from milk was started in China at the end of 2002.
